I was in a restaurant with some friends at Catherine's in Bagasbas Beach and one of the food they ordered is a vegetable dish made from santol. Technically, santol is a fruit so I am not sure if we should call it fruit dish. ahehe.
Sinantolan is .. you guessed it, made from santol. The rind or meat is grated then it cooked in coconut milk and shrimp paste and topped with sili for the spicy flavor.
But, it does taste good.
I am just amazed by this dish.
